10 Easy and delicious sweet Caribbean recipes you can enjoy this spring summer season! Which is your favorite?

5. Boniato Pudding (Jalea de Batata) - A known favorite dessert in the traditional Dominican cuisine. Its main ingredient is the batata, also known as boniato, or sweet potato. There are different ways of preparering this dessert, in this post I share the recipe with pineapple or without pineapple.

6. Coconut Macaroons - These coconut macaroons aka coconut kisses in Spanish, taste so delicious you won't believe they are this easy to prepare! For coconut lovers this is one treat you won't be able to control yourself with, you'll definitely eat more than one kiss!

7. Cassava Bread - . This bread has a resemblance to cassava fritters, with the difference that it is sweet, has coconut and is baked.

8. Passion Fruit Scones - These scones make a delicious morning or afternoon snack. I've been baking these scones for many years and I have also adapted it to make a passion fruit scone cake. Find both recipes in this post.



9. Tropical Pavlova (photo above) - Are you a pavlova lover? Why not try these ´personal size tropical pavlovas topped with pineapple, papaya, melon, and sprinkled with coconut flakes. For Mother's Day these will be a special treat in your dessert table.

One Direction (1D) Cupcakes

Fans would dare to do anything for their favorite artist, including eating them in a cupcake!

These unique One Direction (1D) cupcakes toppers were a custom order from a young customer. The photo I was given at time of the order and used as a guide, belongs to Litte Cherry Cake Company.




I enjoyed working on all the hair styles in fondant, they do take a bit of time, but I am more than satisfied with the end result!


For all the One Direction fans here are you cupcakes!

Medical and Get Well Themed Cupcakes

Medical and get well themed cupcakes, another cupcake creation that I made for a client inspired by a photo they sent me from the Internet. Of course it takes a great amount of time to do all the details in themed cupcake toppers, but I really enjoy making them. Have you worked on cupcake toppers before? Do you enjoy making them?

I make my toppers using fondant only and keep them covered for those that do like to eat them. Most of the time they do get eaten and I happy with that. How about you, do you like to eat cupcake toppers?


I believe they make a lovely "get well" gift and also are adequate for events targeted for medicine or doctors.








I love the way the stethoscope came out. I can't wait to make sweet things like these for my daughter when she graduates in a few years from med school. In the meantime I'll keep practicing!
