Authentic Flavor Made Easy: Mastering Stewed Beans (Habichuelas Guisadas) with Canned Beans

Stewed beans, or habichuelas guisadas, are an essential element of the beloved Dominican dish, bandera dominicana, typically consisting of rice, beans, and meat. With 13 years of living in the country and working from home, I've fine-tuned my skills in creating wonderfully creamy stewed beans with only natural seasonings. My love for cooking and the luxury of time allows me to consistently use fresh beans or dried grains in my bean dishes, resulting in a superior taste.


As a rule, I avoid using canned beans in stews, reserving them for quick recipes such as chili con carne or rice mixes. In my experience, canned beans have a distinct flavor and lack the same level of taste and creaminess as the fresh beans traditionally prepared by our Latin mothers and grandmothers. However, due to time constraints and my husband's craving for rice with chicken (locrio de pollo) alongside stewed beans, I made an exception and used a can of beans. Despite these two dishes presented together are not a common combination among Dominicans, it turned out to be a scrumptious delight! The beans came out delicious and creamy, almost perfect! If you follow my recipe and easy instructions, you'll make the best stewed canned beans ever!


I posted on Facebook that I was going to make this recipe using a can of beans and asked for suggestions… I received many tricks to make canned beans taste good. Just like my cyberfriend, Adalgisa, I also like to add Dominican pumpkin (auyama)  also known as Calabasa or West Indian pumpkin, and coriander to add flavor and texture to the stew. Stewed beans

(Recipe using 1 can of beans) Easy recipe to prepare in 30 minutes!

Ingredients:
½ onion
½ red pepper
½ cube chicken or chicken (optional)
¼ teaspoon ground oregano
2 tablespoons oil
½ teaspoon crushed garlic
1 tablespoon tomato paste or ¼ cup tomato sauce
1 can beans (15oz./439 g )
⅓ cup chopped pumpkin
1 allspice berry (pimento / all-spice) optional
Cilantro sprigs
Black pepper to taste
1½ can of water (12 oz./ 340 g) see step #3

Instructions:
1. Natural seasoning: In a food processor chop the onion and pepper. Add 1 tablespoon of water, oregano, and chicken cube portion, and process until it is almost liquid. 

2. Peel and dice the pumpkin into ½-inch pieces and set aside.

3. Heat 2 tablespoons of oil in a medium saucepan over medium heat. Once hot, add the natural seasoning, tomato sauce, and garlic, then sauté until a rich, thick sauce develops. Next, incorporate the can of beans along with its water, followed by the squash, allspice, and cilantro. To ensure the perfect consistency, use the same can of beans to measure 1½ cans of water, then add it to the mixture. Allow the flavors to meld together over medium heat until the beans are tender and the sauce is infused with deliciousness.

4. Cook covered over low heat for 20 minutes, verify salt, add black pepper to taste, and add ½ teaspoon of lemon juice or vinegar. Cook for 10 minutes or until the pumpkin is tender and the sauce has thickened yet it is abundant. Serve with white rice, meat, and fried plantains. Today I served mine with rice and chicken (locrio de pollo).

Yield: 5 servings.

Dark Chocolate Syrup

This is one chocolate sauce recipe that has surpass all my kitchen testings. It is not too sweet, which makes it perfect to accompany pancakes and ice-cream that are also topped with another sweet syrup. It also has a rich chocolate taste, milk chocolate could be used instead, but this is just luxurious!



The perfect chocolate sauce for profiteroles.

Chocolate Syrup:
2 ounces dark chocolate (65 g)
1 tablespoon butter (15 g)
½ cup corn syrup (120 ml)
2 Tablespoons of cocoa powder (20g)
2 Tablespoons cornstarch (20g)
¼ cup milk (55 ml)

Instructions to prepare chocolate syrup: 
1. Cut the chocolate into pieces and place in a pan with butter and corn syrup.
2. Cook over low heat and stir gently until mixed.
3. In another bowl mix the cocoa powder, cornstarch and milk, add it to the chocolate mixture and bring until boiling point, stirring constantly.
4. Simmer for one minute over medium heat until it has slightly thickened.
5. Remove from heat, and serve warm as topping over ice cream, profiteroles, cakes, flans, puddings, pancakes or brownies.

Pico de Gallo



Pico de Gallo or salsa fresca as some may call it, is an all time favorite at home. We prepare it almost every week to accompany our chili con carne and nachos night. This simple recipe, but full of flavors and colors can be served as a snack with tortilla chips for your guest to enjoy while you serve the main dish. If you don’t already have a favorite way of preparing this salsa, then this recipe is for you. WARNING!!! Fresh homemade salsa is 100 times better then store bought and can be highly addictive!

Guacamole


An all-time favorite... Guacamole! These are great crowd pleasers that will get you out of a hurry when a large amount of visitors appear at your home. There are many versions of these recipe in the web, but I am sure you'll like my version of guacamole. You can serve this with tortilla chips, or as a topping in quesadillas, tacos, nachos or grilled meats. At home these are favorites and are prepared at least once a week.  Check out my fresh homemade salsa that goes perfect with this guacamole: Pico de Gallo.

Guacamole 


Ingredients:
1 large ripe avocado
½ white or red onion
2 Tablespoons of chopped pepper or jalapeno
1 Roma tomato
1 clove garlic, peeled and smashed
1 Tablespoon fresh lime juice
1 Tablespoon chopped cilantro
Salt and black ground pepper to taste


Instructions:
1. Peel, pit and cut avocado into chunks and then smash with a fork.
2. Finely dice the onion, pepper, tomato, and cilantro and mix with mashed avocado.
3. Add crushed garlic, lime juice and salt and black pepper to taste.
4. Transfer to a serving bowl, cover with plastic wrap placed directly on the guacamole and refrigerate for 30 minutes before serving to allow the flavors to blend.
5. Serve chilled with tortilla chips, vegetable crudités or as a topping in quesadillas, tacos or nachos.

Yied: 1 cup 

Note: If you are like me and most likely prepare guacamole on the same day you’re going to prepare some pico de gallo, then it has gotten simpler for you! To make the guacamole all you'll need is the avocado, 1 clove garlic crushed, 1 Tablespoon fresh lime juice and salt and pepper to taste. The rest of the ingredients substitute with 3 Tablespoons of pico de gallo and mix it all together. Enjoy!

Mayonnaise and Ketchup Sauce



This is a delicious sauce or dip to prepare for sandwiches, salads, crackers, onion rings, meats and seafood. Perfect to accompany fried seafood, or entrees. It one of my sous chef daughter,  Ruby, favorite recipes. 

Ingredients:
½ cup mayonnaise
1 ½ cup of of ketchup
1 teaspoon of mustard
3 drops of tabasco

Preparation
Mix the mayonnaise in a bowl with the ketchup, mustard and 2 or 3 drops of tabasco. Once all the ingredients have been mixed, taste it to see if more of any ingredient is needed. Enjoy!
