Meringue Kissed Cookies or Iced Gems Cookies



Totally nostalgic! These meringue kissed cookies are the cutest thing! They remind me of the iced gem cookies that come in plastic purses. My mom used to buy me these when I was a child, and I also remember buying them for my girls. For those of you who do not know which cookies I am referring to, they are called iced gems biscuits or cookies. I found a photo of them here, but not of the purse. For the passionate experienced baker or the new cookie decorators, these are beautiful and inviting without the need to make difficult decorations with many of details.


While working with this mildly spiced cookie dough, I realized that it tastes very similar to the famous cookies sold in the Dominican Republic called Martin cookies. That's why I named them meringue-kissed cookies. Although these cookies are decorated with royal icing, Dominicans call the icing “suspirito” meaning meringue kisses.

I know Dominicans that live abroad or tourist that have visited this country will love to try these and flavor a bit of home in every bite! If you bake these, please share the photos.







No Icing Teddy Bear Cookies



These no icing teddy bear cookies were so easy to make! I wanted to create something cute for my daughters for Christmas and I came up with these. No icing is needed, and that means you can decorate these is a breeze.

Being a mom of three girls you know I had to make the teddies look pretty that is why when I was brain storming for the perfect cookies, I thought of making holes in the neck area before baking the cookies. These holes are needed to insert the satin ribbon through them for the pretty bow. I think I couldn't have done them cuter. These make the perfect treat for any gift giving occasions, great for valentine, baby shower or a baby's birthday party.

Gone Fishing Cookies


These is my version of summertime fun decorated cookies.  I was inspired by my gone fishing cupcakes, so I call them gone fishing cookies. The recipes I used are the following:

Chocolate Sugar Cookies
Royal Icing II
Marshmallow Fondant


Chocolate cupcake filled with coconut flavor italian merengue with coconut flakes, topped with blue italian merengue. The fish is made out of fondant and left to dry for three days to harden. For the fishing rod I used a 7" bamboo skewer.

I used two tones of blue royal icing and mixed them a bit to resemble the sea and sky. I also added white sprinkles to imitate the air bubbles in the water.


For the bamboo rod I used brown icing. This occurred to me at the moment of decorating the cookie, but I wasn't aware if such fishing rod existed until I investigated and to my surprise there are bamboo fishing rods. Mine are much more rustic, but it still was of much enjoyment to make these cookies for my daughters and to eat them.


I glued the fondant fish with royal icing. After all the details were dry, I added bigger air bubbles with white icing and sprinkled them with rainbow disco dust to add a bit of sparkle.

Chocolate Sugar Cookie


This is one chocolate cookie dough recipe you will love to have at hand. This is a variation of the "sugar cookies" recipe  that I use for all my decorated cookies with icing. This dough could be rolled easily without cooling, but I do recommend that after rolling you refrigerate as this helps the cut out cookies to be more defined and to hold their shape when transferring from the work table to the baking sheet. After baked these remain the same sizes, have a perfect texture and a rich chocolate flavor. You got to try them.

Ice Cream Cone Cookies


I made these ice cream cone cookies a couple of weeks ago for my daughters, and I enjoyed decorating them so much I had to share it. These would make a perfect treat for a summer celebration or to give to the guests who will visit us this season. That is if they notified you in advance and don't show up as a surprise at your door!

I don't own an ice cream cone cookie cuter at the moment, so I used a cone-shaped pattern made ​​out of cardboard, a cloud cutter, a heart shape cookie cutter and a decorating tip for the cherry. Of all the cookies I've made, these are the ones I like the most ... well it seems that every time I decorate cookies those become "the ones I like the most" lol. I love cookies, and cupcakes and cakes, but you already knew that.

Decorated Cookies: Blue Hearts with White Border

I recently made these beautifully decorated cookies for my daughters and nieces, and I must say, they are my favorite creations so far this year. The combination of my favorite color and the resemblance to jasperware, which I adore, make these cookies extra special to me. I am eager to continue practicing and perfecting the lace technique I used on the edges, and I plan to create more cookies like these in the future. With Mother's Day approaching, I believe these cookies would make lovely and thoughtful gifts to show appreciation and love.




Below are the recipes for the cookie dough and icing I used to create these delightful cookies Blue Heart Decorated Cookies with White Border:

Sugar Cookie Dough: This easy-to-prepare and workable dough recipe is perfect for creating beautifully decorated cookies.

Royal Icing: This versatile icing is used to fill and make the edges of the cookies. For more information on how to make this recipe and the ideal consistency for decorating cookies, please refer to the instructions.

Adaptation: For the cookies I made, I used 1½ cups of powdered sugar and ¼ cup of granulated sugar, resulting in a perfectly textured cookie.




Tips for outlining and filling cookies:

When outlining and filling (flooding) cookies, it's best to work with only four to six cookies at a time. The number of cookies you handle should depend on how long it takes you to outline them. If you work slowly, outline only four at a time; if you work quickly, outline six cookies. Proceed to fill each cookie until it is completely covered. The filling can be done using tips #2, #3, or #4, depending on the consistency of the icing. For instance, when working a ¼ inch from the edge of the cookie and there is no need to be overly precise, I used tip #4 to outline and flood all the cookies at once.



If you have good control of getting the right consistency in royal icing, you can outline and flood with the same tip size. This is how I prefer to make my cookies to avoid the outline from showing on the final product.


The tips I used to fill are #4 for the blue and #00 for the white border. I think the cookies came out pretty cute besides great tasting.

Heart Decorated Cookies (Galletas Decoradas)


Heart Decorated Cookies for Friendship and Love, my version of a coquette cookie.

Last week I shared a picture on Facebook of a few cookies that I was decorating. Here's the final product. These are a classic at home for Valentine's Day and Mother's Day. I hope these romantic cookies inspire you to bake, decorate, and love way beyond this holiday. 





Due to lots of rain and humidity, I could not do little rose buds in advance to decorate these cookies like I wanted to. What I ended up making were these simple but cute flowers.



The end product was an incredibly charming and romantic cookie. I carefully arranged them in a small, hand-painted wooden trunk created by my daughter, Crystal. I think this would make a lovely gift for loved ones. 


Valentine ain't over for me, the year has 365 days and they are all days for celebrating love and friendship. I hope this post will provide you with inspiration for making cookies and to continuously fall in love with your partner, your family, your work and above all, God.

Decorated Cookies, Christmas 2011


These last four days I been baking and decorating cookies. Although I love making cakes, I must say that I also like decorating cookies very much. I wish had had more time to continually bake and decorated cookies. If you have yet not baked cookies, you still are in time. Gingerbread men are easy to decorate and dry the same day. Today I share photos of the different styles of cookies I decorated. Some are inspired from the web.


The famous, favorites and TRUE classic are the gingerbread man. Thanks to my new gingerbread men cookie cutters in large size. The last two years I’ve been using a mini cutter. These are easy to decorate. All you need is a decorating bag with tip # 1 or # 2. What I like most about them is the smell of the spiced gingerbread cookies.

The garlands are my favorites, I will be using them in our gingerbread house. See step by step how to do a gingerbread house: Here.





I could not leave out the Christmas trees, another holiday favorite. Since this is a new cookie cutter, I look for a simple decorating style. Instead of a star, I made a poinsettia flower with royal icing.



Finally, the three angel cookies, one for each of my daughters. This is also a new cutter that I need to get used to. For the wings: I covered them with icing in gold color, and sprinkled with, holo-gram gold disco dust. This color is thicker than the rainbow dust therefore it covers much more. Note: use only a very small amount.
