Lemon Chicken with Thyme and Garlic Recipe


This is my quick version of my sister’s Lemon Chicken with Thyme and Garlic Recipe. Since I live in the countryside of the island, it’s very hard to find Campbell's Chicken Cream in the local stores, so I came up with this quick version where I have omitted the baking time and Campbell's chicken cream. It is a quick and easy to do recipe, ideal for busy moms. Serve with vegetables, White Rice, or with our favorite, Rice with Noodles.





Lemon Chicken with Thyme and Garlic Recipe 

This Lemon Chicken with Thyme and Garlic will be a family favorite of all times. Quick, easy and healthy way to prepare chicken for dinner.

Ingredients: 
2 lbs. chicken pieces thighs, drumsticks or chicken breasts
¼ cup olive oil
2-3 cups chicken both or 2 chicken bouillon cubes + 3 1/2 cups of water.
2 teaspoons thyme
¼ cup fresh parsley
1 tablespoon crushed garlic
Juice of 3 lemons
½ teaspoon black pepper
2 ½ tablespoons cornstarch + 3 tablespoons of cold water
salt only if needed

Instructions: 
1. Clean and cut chicken into small pieces or leave whole. 
2. On a skillet with ¼ cup of olive oil sauté the chicken until golden brown (About 8 minutes).  
3. If you do not have chicken broth ready at hand, bring to a boil two chicken bullion cubes in 3 ½ cups water to make your chicken broth. Note: ½ cup will evaporate while boiling.
4. Pour 2- 3 cups of chicken broth followed by lemons juice, black pepper, garlic, thyme and parsley.5. Cook for about 20 and then add in dissolved cornstarch in 3 tablespoons of cool water, stir and cook for an additional 5-10 minutes until mixture thickens. Your lemon chicken is done, serve with rice. Enjoy!

Yield: 6 servings.

Chicken Filling for Sandwhich

Delicious Chicken filling for Sandwich


Ingredients: 
Whole wheat bread (preferred) sliced    
1 chicken breast 
10 -12 tablespoons mayonnaise 
Salt pepper to taste 
2 stalks celery, chopped 
1 medium carrot, grated 
1 tablespoon olive oil
 

Instructions: 
1. Season breast with salt and pepper. 
2. Cook covered with a ½ of water. Allow to cool. 
3. Cute into cubes or small strips and mix in the food processor with remaining ingredients. (It is approximately 3 cups of cooked chicken meat.) 
4. Mix with mayonnaise and chopped celery and grated carrot 
5. Spread on bread slice and cover. Cut to taste.

Notes: Cutting the bread with cookie cutters is a great idea for a children party.

Stewed Beef, Dominican style, Carne de Res Guisada



In the Dominican Republic, one of the most popular ways to cook beef is by making beef stew, or as we call it, carne de res guisada. This hearty dish is typically served alongside rice, salad, plantains, or yuca. For a truly authentic Dominican meal, we serve the Dominican flag, which consists of white rice, stewed beans, tostones (fried green plantains), and a fresh salad.

Stewed Beef -Dominican style

Carne de Res Guisada 
 
Ingredients: 
2 ½ pounds of beef
¼ cup of olive oil
2 tbsp of tomato paste
3-4 cups hot water
¼ cup chopped cilantro
3 tablespoons of cooking wine (optional, but recommended)
pinch of salt  or to taste 
For seasoning:
2 tablespoons soy sauce
2 tablespoons of Dominican Sazón, natural seasoning
1 teaspoon pepper
2 teaspoons garlic paste or 4 cloves of garlic mashed
pinch of cinnamon optional


Instructions:
1. Clean and cut the meat into 2-inch cubes.

2. Season with soy sauce, Dominican Sazón, pepper, garlic, and cinnamon; bring to the refrigerator for 1 hour (preferred, but not necessary).

3. Add olive oil to the pot, and when this reaches a hot temperature, sauté meat until it gets a dark golden color.

4. Add cilantro, cover the pot, and leave to cook over medium heat, checking constantly to add a little amount of hot water so that the meat won’t dry out. Cook until meat is tender approx. 1 hour and less if cooked in the pressure cooker.

5. When meat gets tender, Sauté with two spoons of tomato paste, add wine (wait a minute or two until the alcohol evaporates) then add 1-2 cups warm water, the amount of water depends on your taste, season with salt. When the sauce reaches the consistency desired, turn off the heat and serve.

Chicken and Peppers Stir Fry


Chinese cuisine is revered around the globe, and one of the most popular dishes served in restaurants is chicken stir-fry. This recipe is one I'll make over and over again because of how quick it is to prepare and because it is delicious! You can serve it with rice or noodles. I served it the Dominican way, with "White Rice" and “plátanos maduros”. This time  I did not use soy sauce, but instead I let the meat brown well and by letting a brown coat form in the bottom of pan, when I poured the broth  it quickly became dark amber in color. This  advice is for those who do not like soy sauce (Chinese sauce). Enjoy!

Recipe for Chicken and Peppers Stir Fry



Ingredients:
2 pounds boneless, skinless chicken breast, cut into 1 inch pieces
3 tablespoons vegetable oil
1 red bell pepper, chopped
1 green bell pepper, chopped
1 cup onion, diced
3 cups of hot chicken broth
2 teaspoons of garlic paste or to taste
Ground black pepper to taste
Salt to taste
1 tablespoon soy sauce
1 teaspoon powdered ginger
2 ½ tablespoons cornstarch + 3 tablespoons of cold water 

You could also add stir fried: broccoli mushrooms or carrots seasoned with pepper and garlic.
 
 
Instructions:
1. Season chicken with garlic and ground black pepper preferably let stand for 20 minutes. 
2. In a large skillet, heat the oil over medium-high heat. 
3. Add the chicken and cook for 4 to 5 minutes or until lightly browned.
4. Add the chopped peppers and onions, and cook an additional 2 minutes.
5. Combine hot broth, soy sauce, soy sauce and ginger. Add to chicken mixture and bring to a boil over medium-high heat. 
6. Stir in dissolved cornstarch in 3 tablespoons of cool water, stir fry for 2-4 minutes until mixture starts to bubble and thickens. 

Serve over cooked white rice or noodles. 

Notes:
a) If you prefer to add broccoli, mushrooms, carrots, stir fry them before you cook the meat, remove from wok or pan, begin with step 1 and add them later in step 4. 

b) If you do not have chicken broth at hand, you could bring to a boil one chicken bouillon with 3 ½ cups of water, and use this instead.

Mini Meatballs

Today I’ll share with you this great Mini Meatballs recipe, ideal for a family dinner, party or snack. This is an easy recipe to make. 
 

Meatballs
 yields 40 mini - meatballs


Ingredients:
1 pound ground beef
1 egg
½ cup bread crumbs or oatmeal flakes (healthier)
Salt and pepper (for 1 lb. ¼ teaspoon of each or to taste)
2 crushed garlic cloves
½ cup onion, diced in small cubes
1 small diced green pepper diced in small cubes
1 can tomato soup 10 onz. (condensed tomato soup)
2 Tablespoons lemon juice
2 Tablespoons Worcestershire sauce (divided)

Preparation:
1. Mix meat, egg, bread, salt, pepper, crushed garlic, 1Tablespoon of worcestershire sauce and a little of the onions and green peppers; form ½ - ¾ inch balls.
2. Place them on a tray and bake for 10 minutes at 425 F degrees or fry until golden in color.
3. Sauté onion and pepper in butter or oil for 2 minutes over high heat.
4. Add remaining ingredients and meatballs. Cover and simmer 10 minutes over medium heat.
5. Serve with white rice, pasta or potatoes.

Notes: 
a) You can add 2 Tablespoons of the onion and green pepper and mix it into the meat before forming into balls. You can also blend the onions and peppers with a teaspoon of lemon juice if you prefer not feel or see the vegetables.  

b) To the mixture of tomato soup and vegetables you can add ½ teaspoon ground cumin, cayenne pepper and 3 tablespoons brown sugar and ½ cup chopped pineapple for a sweet and sour sauce a little spicy sauce. It is delicious!  ooor simply improvise and ENJOY!

c) Don't want to do the salsa? Well then add the onion and pepper to ground beef mixture like I state in note a, then fry or bake and ready for eating! I recommend doubling the recipe if you're a fan of the meatballs because these are scrumptious!

Hamburger for a King!


My favorite food is hamburger, and I could eat it every day. I saw the following recipe in a television program called, Cocina Gourmet, led by my favorite chef, Eugenia Rojo. Since then, this has been our favorite homemade burger recipe. The meat is juicy and tasty, I recommend it 100% because it’s truly delicious. 


In D.R. Father’s Day is celebrated in July, therefore, being this my first Father’s Day recipe as a blogger, I would like to dedicate this recipe to the memory of my father, Marino Núñez, who was the first to teach me how to make homemade New York Hilton style hamburgers, for being the best father in the world to me and because he was such a  good hearted person. May God have him in his glory. 



Ingredients:
The preparation of the beef patties: 2 lbs. ground beef meat, 1 medium onion cut into small cubes, 2 red peppers, roasted and chopped, 2 half spoons BBQ sauce, 2 tbsp Worchestire, 2 tablespoons of ketchup, 1 teaspoon black pepper, 1/2 teaspoon of oregano, 1/2 teaspoon salt , 2 cups of oatmeal, 2 eggs.
 
To assemble the Burger: Buns, cheese (Danish) bacon, lettuce , tomatoes, 1 onion cut in rings. Ketchup and mayonaise. You could use the MayoKetchup sauce, it goes well with this burger.

Preparation: mix all ingredients for the preparation of the beef patties, and shape into burger patties. In a skillet with a little oil, Cook to taste. 

 
I prefer the following order from the bottom – up between breads: ketchup, pickles, onion, meat, cheese, lettuce, tomato and mayonnaise. Lol, I begin to sound like sponge Bob! However way you please to assemble your burger is OK…. Enjoy!!!!
