Vanilla Rainbow Cupcakes


Colorful Rainbow Cupcakes with Suspiro, Meringue frosting. This recipe is the basic vanilla cupcake recipe and all you need to do is to add color to the mix. Divide the mix in bowls, and use as many colors you like.

Vanilla Cupcake Recipe

Ingredients:
⅔ cups of margarine or butter (286 g)
1 ¾ cups sugar (351 g)
2 eggs
3 cups sifted flour (384 g)
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon vanilla extract
1 ¼ cups (296 ml) of milk
½ teaspoon of lemon rind (optional) I like the taste it adds to the mix.

To make Rainbow Cupcakes:
Gel Colors as many colors as you want. 

Preparation: 
1. Prepare cupcake trays, greased or lined with cupcakes cups.
2. Preheat the oven to 350 ° F (175°C).
3. Sift together flour, baking powder and salt; reserve.
4. Cream together butter with sugar until light and fluffy.
5. Add eggs and vanilla, beat until well mixed approximately 3-5 mins.
6. Add flour mixture to the mix alternately with milk, mix well after each addition. Continue beating a minute. If you are doing regular vanilla cupcakes advance to step # 8.
7. Divide mix depending on number of colors to being used. Add a few drops of color and mix each individually.
8. Pour into prepared cupcakes tray. Bake 20-25 minutes or until the inserted tooth pick comes out clean. 

Let cool completely before of decorating.

Yields 24 cupcakes


You can use as many colors as you want.

Banana Cupcakes




After a few years of living in the Dominican Republic, I got homesick for American-baked desserts. That was one of the reasons why I started to bake. One of the missed goodies was Banana Bread. After reading several recipes for banana bread, I combined several of them and the result was the following recipe slightly low in sugar, soft, and great tasting. I named it after me because these cupcakes gave me great fame with my three precious daughters Crystal, Ruby, and Topaz and their classmates.


These cupcakes are soft, and airy and can be eaten at any time of the day. The recipe is very easy to do, and the aroma in the house while these are baking is very tempting and deliciously sweet. This recipe is tested, recommended and guaranteed. I hope you enjoy these banana cupcakes as much as my family and I have enjoyed it.
