After a few years of living in the Dominican Republic, I got home sick for American baked desserts. That was one of the reasons why I started to bake. One of the missed goodies was, Banana Bread. After reading several recipes for banana bread, I combine several of them and the result was the following recipe slightly low in sugar, soft and great tasting. I named it after me because these cupcakes gave me great fame with my three precious daughters Crystal, Ruby, Topaz and their classmates.
These cupcakes are soft, airy and can be eaten at any time of the day. The recipe is very easy to do, and the aroma in the house while these are baking is very tempting and deliciously sweet.
