Nancy's Cauliflower Salad


My sister Nancy makes this salad that tastes incredibly delicious. I love this recipe since it presents the cauliflower in an appealing way for picky veggies eaters, and at the same time makes a potato salad full of nutrients. If you prefer, you may prepare it without the potatoes, and it would make a grand low calorie / Carb salad.
Ingredients:
1 cauliflower
3 small potatoes 
2 hard boiled eggs, peeled and chopped
chives chopped
cup mayonnaise or taste
2 Tablespoons vinegar
salt and pepper to taste

You can also add, bacon, ham, turkey, chopped celery or paprika. 

Preparation:
1. Washed and boil potatoes until tender; then peel and cut into slices. 

2. Cook cauliflower and drain, after cold cut into medium size cubes. Add boiled eggs, chives, vinegar, mayonnaise, salt and pepper. 

3. Combine ingredients and chill before serving.
