Hamburger for a King!


My favorite food is hamburger, and I could eat it every day. I saw the following recipe in a television program called, Cocina Gourmet, led by my favorite chef, Eugenia Rojo. Since then, this has been our favorite homemade burger recipe. The meat is juicy and tasty, I recommend it 100% because it’s truly delicious. 


In D.R. Father’s Day is celebrated in July, therefore, being this my first Father’s Day recipe as a blogger, I would like to dedicate this recipe to the memory of my father, Marino Núñez, who was the first to teach me how to make homemade New York Hilton style hamburgers, for being the best father in the world to me and because he was such a  good hearted person. May God have him in his glory. 



Ingredients:
The preparation of the beef patties: 2 lbs. ground beef meat, 1 medium onion cut into small cubes, 2 red peppers, roasted and chopped, 2 half spoons BBQ sauce, 2 tbsp Worchestire, 2 tablespoons of ketchup, 1 teaspoon black pepper, 1/2 teaspoon of oregano, 1/2 teaspoon salt , 2 cups of oatmeal, 2 eggs.
 
To assemble the Burger: Buns, cheese (Danish) bacon, lettuce , tomatoes, 1 onion cut in rings. Ketchup and mayonaise. You could use the MayoKetchup sauce, it goes well with this burger.

Preparation: mix all ingredients for the preparation of the beef patties, and shape into burger patties. In a skillet with a little oil, Cook to taste. 

 
I prefer the following order from the bottom – up between breads: ketchup, pickles, onion, meat, cheese, lettuce, tomato and mayonnaise. Lol, I begin to sound like sponge Bob! However way you please to assemble your burger is OK…. Enjoy!!!!

Plátanos al Caldero (English)

Plátanos al Caldero, Caramelized Ripe Plantains, is a traditional Dominican side dish recipe. It’s made with ripe plantains and is sweetened a bit more with sugar and spice. Although it may seem odd to have it as a side dish at dinner, you’ll find it goes well because it gives the food the right touch of exotic sweetness. I will share my version of this recipe with a citric touch.



Plátanos al CalderoCaramelized Ripe Plantains


Ingredients:
  Platano maduro, sweet plantains
4 very ripe plantains
2 tablespoons of butter
2 tablespoons of oil
1 cup of sugar
2 cups of water
3 tablespoons of orange juice, rum or sweet red wine
¼ teaspoon of ground cinnamon 
¼ teaspoons of ground cloves 
½ teaspoon of orange rind



 
Preparation:

1. Peel the plantains and cut into halves or three sections. In a shallow frying pan (preferably a non stick pan) heat the butter and oil, add the plantains and sauté until golden brown (turning each plantain once or twice).

2. Sprinkle ½ cup of sugar, orange rind, cloves and cinnamon on top of the plantains, pour 1 cup of water and orange juice into the frying pan, cover and cook for  6 minutes at medium heat. Un cover and turn each plantain to even give them an even cook.

3. Add remaining  ½ cup of sugar, 1 cup of water, cover and cook until plantains are tender when poked with a fork and sugar has caramelize, but do not let it dry out. Turn off the heat and serve immediately.

Delicious Mango Passion Fruit Marmalade

When I saw this marmalade recipe, I thought about how delicious the combination of the passion fruit and mango could be, and let me tell you it is!! It is a delicious tropical combination. Try this recipe you´ll thank me for it. Enjoy! 


For this recipe I used organic mangos from our farm.

Delicious Mango Passion Fruit Marmalade

(Recipe adapted from Mis recetas Favoritas

Ingredients:
2 ½ pounds of mangos peeled and chopped finely

2 ½ (300 gr ) cups white sugar or moscabado 

Pulp of two passion fruit (I used 1 cup)

Fresh juice of one large lemon



Instructions:
1. Place mangos and passion fruit pulp in a large pot, set to a medium–low fire for half-hour.

2. With a hand blender, blend until mango pieces are broken down.

3. Add sugar and continue to cook on medium heat moving constantly until jam consistency is achieved.

Notes: Stir constantly and do not leave unattended  because it tends to stick to the pot. A cinnamon stick can be added if you like, in step No.3.

Yield: Two jars like the one shown on the photo.
