Nectarine Fruit Crumble


This nectarine crumble is so delectable!! What I love about this dessert is the combination of pecans, oats and the fruit cooked in its juice. This is a dessert to enjoy and to prepare often because it is too easy to prepare. You can use this same recipe to prepare an apple crumble, pear or plum crumble.

My daughters are also great inspiration a motivators because every time I post, it's one less recipe they can't say they do not know how to prepare, lol.


I mixed all the dry ingredients before adding butter for photo purpose, but the steps are a bit different. I will explain in the recipe's instructions below.



Nectarines are like peaches, except the they do not have the furry skin and are a bit darker in skin color.


Mix sliced fruit with sugar, juice and cornstarch and set aside so that the fruit can begin releasing it's juices while you  prepare the crumble.


After combining all the dry ingredients and butter your crumble will look like this. Pecans can be substituted with another nut or omitted if you like.


After placing the fruit in baking dish, cover completely with crumble.


Bake at 375F until your nectarine  fruit crumble looks like the one below... yummy!

Nectarine Fruit Crumble 

Ingredients: 
2 ¼ pounds of Nectarines, halved, pitted and cut into eighths (1 kg)
¼ cup brown sugar (55g)
2 Tablespoons of orange juice (30ml)
1 Tablespoon cornstarch

Crumble topping: 
2 ½ cup all purpose flour (380g)
¼ teaspoon ground nutmeg
½ teaspoon ground cinnamon
¾ cup margarine or butter (170g)
1 cup of old fashion rolled oats (I used instant oats)
1 cup brown sugar (220g)
¼ cup of chopped pecans

Instructions: 
1. Preheat the oven to 375˚F (190˚C). Lightly grease a 2.5 quart (2.3 L) baking dish and place in baking tray lined with parchment or wax paper.
2. In a bowl mix nectarines with sugar, orange juice and cornstarch, stir to coat the fruit completely. Set aside.
3. Mix flour, cinnamon and nutmeg and sift together. Rub in the margarine with your fingers until the mixture resembles bread crumbs. Stir in oats, sugar and pecans. Mix well until combined.
4. Place the nectarines in baking dish, top with the crumble and bake for 45-50 minutes or until topping is golden and fruit is tender.
5. Serve warm alone or topped with vanilla or peach ice-cream or whip cream.

Yield: Serves 10.
 
Notes: 
a) This dessert is just right in sweetness; like I call it the health sweetness, but if you have a very sweet tooth you might want to add more sugar.
b) Other fruits like apples, peaches, plums, and pears could be used instead of nectarines.
